Rock Creek Rich Chicken Broth

Always take time to get complete use of these birds.
After roasting or broiling the chicken, remove ALL of the meat from the bones.
Place the carcass and bones in a heavy pot, add enough water to cover them, put the lid on and bring to a full boil. Then simmer (covered) for 2 hours. Cool and strain.
Refrigerate or freeze for use at a later time. The cold broth will gel, this is normal, and it will liquefy when heated.
Use in any recipe calling for chicken broth. Canned broth is diluted with water. This is the real thing and will add a richness to your recipes.
