Rock Creek Dry Rub

This is our variation of a dry rub. It allows us to adjust the heat and seasonings. All of the ingredients are dry therefore refrigeration is never needed. You will need to grind these to a fine powder. Either use a good grain/coffee mill or a grain mill attachment to your stand mixer. We use the powerful Vita-Mix blender that can grind the spices into a fine powder.
 
          1/2 cup Paprika
          1/3 cup Black Peppercorns
          1/3 cup Garlic Powder
          2 tablespoons Kosher Salt
          1/3 cup Minced Onion
          1/4 cup Cayenne or Chili Powder
          2 tablespoons of thyme
          1 tablespoon of marjoram
          2 tablespoons of oregano
 
This can be stored in the cupboard, no refrigeration is required. Place in a well sealed jar with a small bag, made of cheesecloth, filled with rice to absorb moisture.
 
This can be used with almost anything, scrambled eggs, roasts, steaks, hamburgers and of course Rock Creek Chicken.
