Rock Creek Dry Rub
| This is our variation of a dry rub. It allows us to adjust the heat and seasonings. All of the ingredients are dry therefore refrigeration is never needed. You will need to grind these to a fine powder. Either use a good grain/coffee mill or a grain mill attachment to your stand mixer. We use the powerful Vita-Mix blender that can grind the spices into a fine powder. |
| 1/2 cup Paprika |
| 1/3 cup Black Peppercorns |
| 1/3 cup Garlic Powder |
| 2 tablespoons Kosher Salt |
| 1/3 cup Minced Onion |
| 1/4 cup Cayenne or Chili Powder |
| 2 tablespoons of thyme |
| 1 tablespoon of marjoram |
| 2 tablespoons of oregano |
| This can be stored in the cupboard, no refrigeration is required. Place in a well sealed jar with a small bag, made of cheesecloth, filled with rice to absorb moisture. |
| This can be used with almost anything, scrambled eggs, roasts, steaks, hamburgers and of course Rock Creek Chicken. |
