Rock Creek Lemon Mustard Chicken

If, for some reason, you have any left over chicken.
Give this recipe a try!
 
          1 pound of left over chicken
          2 tablespoons of olive oil
          1 tablespoon of Grey Poupon mustard
          1 tablespoon lemon juice
          1˝ teaspoons lemon pepper seasoning
          1 teaspoon of dried oregano or basil
 
Mix all of these ingredients together and place in a zip lock bag with 1 pound of left over rock Creek chicken. Refrigerate at least 2 hours or overnight.
 
          1 cup of rice
          1 pint (2 cups) Rock Creek Chicken Broth
 
Cook the rice in the broth (about 20 minutes).
 
Lightly sauté the chicken and the marinade.
 
Serve the chicken on a bed of rice.
