Rock Creek Lemon Mustard Chicken
| If, for some reason, you have any left over chicken. Give this recipe a try! |
| 1 pound of left over chicken |
| 2 tablespoons of olive oil |
| 1 tablespoon of Grey Poupon mustard |
| 1 tablespoon lemon juice |
| 1˝ teaspoons lemon pepper seasoning |
| 1 teaspoon of dried oregano or basil |
| Mix all of these ingredients together and place in a zip lock bag with 1 pound of left over rock Creek chicken. Refrigerate at least 2 hours or overnight. |
| 1 cup of rice |
| 1 pint (2 cups) Rock Creek Chicken Broth |
| Cook the rice in the broth (about 20 minutes). |
| Lightly sauté the chicken and the marinade. |
| Serve the chicken on a bed of rice. |
